Savory Pea Pods and Apples

This colorful side dish features apples, leeks, pea pods, and turkey bacon.

Cook Time: 10 mins
Total Time: 20 mins

Ingredients
2 teaspoon oil, cooking
3 slices bacon, turkey, cut crosswise into thin strips
2 medium leeks, chopped
3 apples, tart, cut into 1/2-inch-thick slices
4 cups pea pods, fresh, trimmed and strings removed
1/8 teaspoon salt
1/8 teaspoon pepper, cracked black


Preparation
In a 12-inch skillet, heat oil over medium heat.
Add turkey bacon; cook for 2 to 3 minutes or just until crisp, stirring occasionally.
Add leeks and apples to bacon.
Cook and stir for 3 to 4 minutes or just until apples are tender.
Add pea pods.
Cover and cook for 2 to 3 minutes more or until pea pods are crisp-tender.
Sprinkle with the salt and cracked black pepper.
