Spinach-Cheese Casserole

Serves 4

1 (10-ounce) package frozen chopped spinach, thawed
1/2 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
4 large eggs
Salt and pepper (optional)
1/4 tsp garlic powder (optional)
1 dash cayenne pepper (optional)
1/2 tsp Italian herb seasoning (optional)

Drain spinach, then place it in a bowl and break it up into small clumps.
Preheat the oven to 350 F. Line a baking sheet or pan with parchment paper or coat it with nonstick spray.
Add the remaining ingredients to the bowl and stir well.
Spread the spinach mixture onto the prepared baking sheet or pan.
Bake for 20 minutes or until the casserole is dry and golden brown.
Remove the casserole from the oven, then loosen it from the parchment paper.
Let it cool before cutting it.
